Woher kommt die Crema & was sagt sie aus?

„Oh, das ist ja richtig guter Kaffee, schau dir mal die Crema an!“

So oder so ähnlich, ist der Subtext vieler Werbebotschaften und auch nicht weniger Unterhaltungen, die ich über die Jahre verfolgen durfte. Das Schäumchen auf dem Kaffee scheint DER Indikator zu sein für die Qualität unseres Lieblingsgetränks.

Aber, wie sieht denn die Crema eines richtig guten Kaffees aus? Wie entsteht Crema auf dem Kaffee eigentlich? Was ist Crema überhaupt und was verrät sie uns denn wirklich über den Kaffee?

Wie entsteht Crema auf dem Kaffee?

Das ist schnell erklärt. Beim Rösten der Kaffeebohnen entstehen jede Menge Gase in der Bohne, vor allem CO2. Durch den so entstehenden hohen Druck „explodiert“ die Bohne bei der Röstung irgendwann, vergleichbar mit Popcorn. Das Gas ist zu einem guten Teil auch nach dem Röstvorgang noch in den porösen Strukturen der Bohne gefangen.

Sobald wir nun die Bohne aufbrechen, aka. klein mahlen, öffnen wir auch die kleinen Blasen, in denen das Gas festhängt. Wenn wir jetzt noch heißes Wasser draufgeben, bläht der Kaffee auf und der Entgasungsprozess verstärkt sich rapide. Das Resultat kennst du vielleicht vom Filterkaffee Brühen. Bei dieser Methode entweicht das meiste einfach nach oben. (Auch beim Filterkaffee hat dieses Teil einen nicht unerheblichen Einfluss, aber das gehört an eine andere Stelle).

Zwei Espresso Tassen stehen auf einer Maschine, während hellbraune Flüssigkeit aus einem Siebträger hineinläuft. Die Espressomaschine im Hintergrund ist schwarz, genau wie der Griff des Siebträgers.

Bei Zubereitung in einer Siebträgermaschine kann aber nichts nach oben entweichen, sondern wird mit hohem Druck durch den Kaffee gepresst. Ebenfalls lösen sich – wie bei jeder Extraktion von Kaffee – jede Menge Öle.

Ein Siebträger heißt Siebträger, weil in diesen Griffen – den „Trägern“ – ein Metallsieb gehalten wird. Durch genau dieses wird jetzt unsere Mischung aus Kaffee, Gasen, Ölen und Feinstpartikeln gepresst. Das Ergebnis ist ein sehr feinporiger Kaffeeschaum auf meinem Getränk, dieser wurde vor vielen Jahrzehnten Crema getauft.

Die Crema auf dem Kaffee ist also einfach Kaffeeschaum, aus Kaffee, Feinpartikeln, Ölen und Gasen.

Was sagt uns die Crema beim Kaffee?

Tja, mal überlegen. Laut vielen Werbebotschaften erkennt man an ihr guten Kaffee. Tatsächlich ist das auch nicht ganz falsch, wird aber selten im richtigen Kontext verwendet.

Wir wissen nun was Crema auf dem Kaffee ist, nämlich Schaum. Dieser entsteht aber bei jedem Rohprodukt. Er ist einfach nur ein Ergebnis der Zubereitungsart. Über die Qualität des verwendeten Kaffees, sagt mir das (fast) nichts.

„Fast nichts“, da das geübte Auge im Vergleich mit anderem Kaffee, bzw. anderen Chargen, Blends, Röstungen, etc. durchaus ein paar Dinge über die Herkunft erahnen kann. Dies aber auch nicht abschließend, das ist eher ein Hinweis, der im Gesamtkontext Sinn ergeben kann.

Worüber uns die Crema aber etwas verrät ist:

Wie wurde der Kaffee zubereitet?

Eine Crema entsteht nur wenn ausreichend Druck in der Zubereitung verwendet wurde und kein Filterpapier – das würde ja Teile des Ganzen herausfiltern. Ein Kaffeegetränk mit Crema wurde also immer mit Druck extrahiert.

(Hier gibt es eine Ausnahme: Ein namenhafter Hersteller von Kapselmaschinen hat ein Produkt, welches die Crema durch Rotation entstehen lässt. Ein Video dazu findest du weiter unten.)

Wie gut war die Extraktion?

Wer ein wenig Übung und damit Vergleichsmöglichkeiten hat, kann an der Crema auf einem Espresso oder Cafe Creme ein paar Hinweise sammeln, um Fehler in der Extraktion zu erkennen. Bei einem Americano geht das übrigens nicht.

Auffällige weiße oder sehr dunkle Flecken, deutliche Klumpen mit gleichzeitigen Löchern in der Crema, schnelles Zerfallen, und all sowas, ist ein Indiz für Fehler in der Kaffeezubereitung.

Wie geht es der Mühle?

Wunderschön sind „Tiegerstreifen“ auf der Crema. Sie entstehen durch sehr viele Feinpartikel. Treten sie gehäuft auf, bzw. werden sie deutlich mehr, kann das ein Zeichen für stumpf werdende Mahlscheiben oder andere Disbalancen in der Kaffeemühle sein.

Wie frisch ist mein Kaffee?

Je frischer der Kaffee, desto mehr CO2 ist noch in der Bohne. Die Rechnung ist also einfach, je frischer der Kaffee, desto mehr Crema entsteht auf dem Kaffee. Übrigens auch ein Grund nicht nach dem optischen Füllstand einer Espresso Tasse zu gehen, das kann nämlich täuschen.

Woran erkennt man gute Crema?

Eine gute Crema erkennt man vor allem an der Gleichmäßigkeit. Die ist bekanntlich bei allem im Kaffee das große Ziel. Für mehr Info dazu schau gern mal in meinen Beitrag zur Gleichmäßigkeit im Kaffee.

Eine schöne Crema ist leicht elastisch, gleichmäßig verteilt, gleichmäßig braun und schließt sich wieder von allein. Der Braunton wird hauptsächlich durch die Röstung bestimmt. Je dunkler die Röstung, desto dunkler auch die Crema. Eine gute Crema kann also je nach Kaffee alles zwischen hellgolden bis kastanienbraun haben. Wie dick sie sein sollte, hängt schwer vom verwendeten Kaffee ab. Auch dazu gibt es nichts Pauschales.

Zusammengefasst

Die Crema beim Kaffee verrät uns Einiges. Allerdings hauptsächlich Indizien über die Fehlerfreiheit seiner Zubereitung, und auch überwiegend nur im Vergleich. Für die Beurteilung der Rohkaffeequalität gibt sie uns maximal Hinweise, welche mit vielen weiteren Informationen kombiniert Sinn ergeben.

Ist es also falsch die Crema als Qualitätsmerkmal zu sehen? Jein, denn ein guter Kaffee muss ja auch gut zubereitet sein. Ein fehlerfrei zubereiteter Kaffee setzt voraus, dass sich jemand damit auseinandergesetzt hat, was dann auch wiederum die Chance erhöht, dass ein hochwertiges Produkt verwendet wurde. Auf der Verpackung im Supermarkt ist die Werbung mit „guter Crema“ aber einfach nur genau das, nämlich Werbung.
