Frischer Kaffee, Teil 1 - Folge 88

Wir alle kennen diesen betörenden Duft von frischem Kaffee. Egal ob es frisch gemahlener Kaffee, frisch gebrühter Kaffee oder frisch gerösteter Kaffee ist – die Aromen verzaubern uns.

Damit das so ist muss ganz schön viel ganz schön richtig laufen. Damit Du deinen frischen guten Morgen Kaffee genießen kannst muss auch der Rohkaffee frisch sein.

Da Frische im Kaffee so wichtig ist, aber auch oft so falsch verstanden wird, gibt es hier eine kleine 2er Serie, genau dazu. Heute in Teil 1 soll es vor allem erst mal um den Teil des Lebenswegs von Kaffee gehen, der für uns Konsumenten erst mal eher versteckt ist.

Heute geht es also darum:

Was kann denn überhaupt frisch sein an Kaffee?
Was wird gemacht, damit er frisch beim Röster ankommt?
Wie frisch sollte der Rohkaffee sein?

Frischer Kaffee, was ist das überhaupt?

Frischer Kaffee generell

Ein Kaffee kann auf verschiedene Weisen frisch sein. Frisch geröstet, frisch gebrüht, frisch geerntet, frisch aufbereitet. Je nach Lebensphase, in welcher er ist, sind es unterschiedliche Qualitäten, die ihn für den Betrachter als frisch ausmachen.

Verwirrend? Ja, finde ich auch. Daher lass es uns mal ein bisschen weiter herunterbrechen und mit einem Beispiel arbeiten. Nehmen wir dafür einen Apfel:

Einen frischen Apfel zeichnet für die meisten Menschen wohl aus, dass er in nennenswerter Weise frisch, knackig, saftig, vielleicht leicht säuerlich ist, aber mit genug Süße das alles abrundet. Je unfrischer er wird, desto weicher und meist auch weniger saftig wird er. Die Balance der Aromen verschiebt sich mit zunehmendem alter in eine apfeltypische Richtung, oft süßer und leicht bitter.

Genauso kann man sich das auch bei Kaffee vorstellen, nur durchläuft dieser eben deutlich mehr Schritte und hat damit deutlich mehr Arten der Existenz als so ein Apfel. Was aber allen dieser Momente gemein ist, ist dass wir ihn als frisch ansehen, wenn eine gewisse Balance aus Inhaltstoffen, später dann Aromastoffen, sowie Feuchtigkeit und Zellspannung vorhanden ist.

Frischer Grünkaffee

Frischer Grünkaffee beispielsweise hat eine frische grasgrüne Farbe und einen gewissen Feuchtegrad. Je älter er wird, desto bräunlicher, oder weniger grün wird er. Außerdem verliert die Bohne an Spannkraft. Aber auch im Inneren verändern sich die vorhandenen Stoffe, welche dann eben vielleicht nicht mehr dieselben Aromen bilden, wie sie es vielleicht im frischen Zustand getan haben.

Der Ausgangszustand variiert in Form und Ausprägung natürlich extrem durch die Varietät, Herkunft, Aufbereitung und Qualität des Rohkaffees. Ein frischer hochgewachsener kenianischer Kaffee hat beispielsweise eine grün-bläuliche Färbung und ist unglaublich hart. Während ein tiefergewachsener Brasilianer, grün-bräunlich und deutlich weicher ist.

In Relation können beide jeweils frisch sein. Wie lang sie es aber sind, dass hängt dann von allerhand Faktoren, u.a. der Qualität ihrer Aufbereitung, ab.

Frischer Röstkaffee

Sobald Kaffee geröstet wurde, beschleunigt sich der Alterungsprozess massiv. Die hier während der Röstung werden chemische Umwandlungsprozesse gestartet, die nicht wieder von allein Aufhören. Sie sorgen beispielsweise auch dafür, dass Kaffee irgendwann nur noch fad und bitter schmeckt, auch wenn man die Bohnen gerade erst frisch gemahlen hat.

Frischer Röstkaffee hat noch jede Menge Röstgase und deutlich mehr verfügbare, bzw. wahrnehmbare Aromen, als kurze Zeit später. Wie sich das Auswirkt und woran man das Erkennt, darum wird es in Folge 2 dieser Serie gehen – also solltest du mich das fragen jedenfalls. Das kannst du ganz unten im Kommentarfeld tun.

Wie wird der Rohkaffee frisch gehalten?

Auch wenn es ein zu frisch bei Rohkaffee gibt, ist die ausreichend lange Lagerung in aller Regel nicht das Problem, sobald es Export Kaffee ist. Die Herausforderung, dass im Konsumentenland frischer Kaffee ankommt, ist deutlich größer.

Je nach Qualität und Preis des Rohkaffees wird hier auf verschiedene Arten der Verpackung zurückgegriffen.

Bigbags oder Supersacks

Sind im Endeffekt nichts anderes als monströse und äußerst stabile Plastiktüten, meistens mit Henkel dran, um es verladen zu können. In ihnen wird die Massenware containerweise zum Käufer verschifft. Sie helfen vor allem beim Be- und Entladen und Schützen den Kaffee grob vor Schmutz & Co. In manchen Fällen, wird aber nicht mal das genutzt, hier wird der Kaffee als Schüttgut transportiert.

Jutesack

Der Jutesack ist wohl die klassische Weise Kaffee zu transportieren. Funktioniert einfach: Sack bedrucken, Bohnen rein, oben zunähen, fertig. Nachteil daran, eine wirkliche Schutzfunktion ist nicht gegeben. Staub, Gerüche, Tiere aller Art, Feuchtigkeit und vieles mehr hat quasi ungehemmten Zugang zum Kaffee. Dieser kann außerdem fleißig oxidieren, da Jute durchaus atmungsaktiv ist.

Greepro

Daher gibt es seit einigen Jahren in fast allen Jutesäcken einen „Greenpro“ Sack. Also quasi eine dicke grünlich transparente Plastiktüte, im Jutesack. Dadurch wird eine weitere Schutzbarriere aufgebaut. Lohnt sich aber auch erst ab einer gewissen Mindestqualität des Kaffees.

Vakuum

Die ganz edlen Schätze werden vakuumiert in Paketen verschickt. Die so versendete Menge ist meist deutlich geringer als ein Jute Sack, die Kosten aber deutlich höher. Entsprechend ist diese Art eher bei Boutique Kaffees interessant.

Beim Importeur oder Röster

Einmal an seinem Bestimmungsort angekommen, sollen die Bohnen natürlich lange frischer Kaffee bleiben – am besten bis die nächste Ernte kommt. Kein einfaches Unterfangen, denn Rohkaffee altert nun mal. Kaffeekäufer weltweit achten daher auf konstante eher niedrige Lagertemperaturen und setzten in Teilen sogar Humidore ein.

Gibt es auch gereiften Kaffee?

Ja, tatsächlich gibt es auch schonend gealterten Rohkaffee. Wenn man den Prozess nämlich aufmerksam und mit den richtigen Mitteln steuert, dann kann man eine sehr milde und weiche Version des Urspungskaffees entstehen lassen. Vor allem bei günstigeren Kaffees aus Indonesien wird das häufiger mal gemacht, meist mit dem Ziel einen guten unauffälligen Füllkaffee oder einen sehr magenschonenden Kaffee zu produzieren.

Nachteil ist aber natürlich, dass man hier viele der spannenden Aromen opfert und das Ergebnis schnell einfach nur holzig, muffig und fad schmeckt.

Der bekannte Monsooned Malabar ist im erweiterten Sinne ähnlich entstandener Kaffee. Dazu aber mal in einer eigenen Folge etwas mehr.

Fazit

Wie bei jedem Lebensmittel ist auch frischer Kaffee einfach die leckerste Version des Ganzen. Es gibt dabei aber mehrere Momente im Lebensweg eines Kaffees, in denen er auf unterschiedliche Weise frisch sein kann. Dabei gibt es eben auch zu frisch.
