Espresso Tonic, Cold Brew & Co.

Es ist heiß und die Urlaubssaison läuft (zum Glück), oder steht zumindest kurz davor. Jeder sehnt sich nach kühlen aromatischen Erfrischungen und genau diese gibt es auch aus unserem liebsten Rohstoff. Es gibt weit mehr Sommer Kaffee Rezepte, als den angestaubten Eiskaffee – auch wenn sich dieser natürlich weiterhin großen Beliebtheit erfreut.

In den letzten Jahren wurden auch Kreationen, wie Cold Brew, Cold Drip, Espresso Tonic, Iced Coffee und wie sie alle heißen, immer populärer. Viele Firmen und Restaurantketten sind in der jüngeren Vergangenheit auf diesen Zug aufgesprungen, meist mit mittel begeisterten Kunden. Auch bei diesen Kreationen sollte man auf ein paar Grundregeln achten, denn sie sind deutlich mehr als nur kalter Kaffee.

Eine wichtige Sache vorneweg:

Wenn du am Ende ein leckeres Ergebnis haben willst, dann ist eines bei kaltem Kaffee noch viel wichtiger als bei heißem: Du brauchst gute, frische und geeignete Kaffeebohnen als Ausgangsprodukt!

Was jeweils geeignet ist schreibe ich dir natürlich immer mit dazu, was „gut“ bedeutet, dazu habe ich dir schon eine Folge aufgenommen, die findest du hier.

So, jetzt geht’s aber los:

Cold Brew

Wenn man den Namen wörtlich übersetzt, weiß man worum es hier geht, um kalt gebrühten Kaffee. Das ist ein ganz entscheidender Punkt, denn die Temperatur während des Brühprozesses, hat einen ganz entscheidenden Einfluss auf die Mischung und Balance der extrahierten Aromen. Einfacher gesagt, mit kaltem Wasser bekommst du ein komplett anders schmeckendes Getränk aus der gleichen Bohne.

Oft in einen Topf geschmissen werden auch Cold Brew, Cold Drip und Iced Coffee. Ja, alles kalter Kaffee, aber eben unterschiedlich zubereitet und daher mit erheblichen Unterschieden im Geschmack. Wie die Namen schon verraten, tropft beim Cold Drip das kalte Wasser auf den Kaffee und der Iced Coffee ist schnell heruntergekühlter – geeister – Kaffee. Ein Rezept für den Iced Coffee findest du übrigens auch im PDF.

Der Cold Drip ist super lecker, aber anfangs mit einem deutlich größeren Aufwand verbunden, als der Cold Brew, welcher genau deshalb für mich alltagstauglicher ist.

Ein Cold Brew in einem schön verzierten Glas. Wir sehen das Glas mit der rubinbraunen Flüssigkeit auf einer weißen Serviette auf einem braunen Holztablett stehen. Im Glas schwimmt ein großer Eiswürfel. Im Hintergrund erkennt man verschwommen einen hölzernen Liegestuhl, auf einer Wiese.

Rezept:

  1. 80 – 100g sehr grob gemahlenen, Kaffee in ein kühles Gefäß geben
  2. 1L kaltes, ggf. gefiltertes Wasser aufgießen
  3. Kräftig Rühren
  4. Gefäß Abdecken
  5. 12 – 24 Stunden ziehen lassen
  6. Je nach Zubereiter: Cold Brew abfiltern*, oder Einsatz entfernen**.
  7. In ein schönes Glas einschenken, etwas nach Belieben dekorieren
  8. Kann nach Bedarf und Geschmack noch mit gefiltertem Wasser, oder Eiswürfeln verdünnt werden, oder mit Orangenlimo verfeinert werden.

Empfohlener Kaffee: 100% Arabica am besten reinsortig, helle Filterkaffee Röstung, hohe Qualität, viel Frucht, gern viel Süße, z.B. Afrikanische Kaffees, oder aus sehr hohen Lagen zentral Amerikas. 

Es gibt einige Rezepte für Cold Brew. Dieses hier ist mein meist genutztes. Es gibt aber auch die Variante den Kaffee mit mit ca. 80ml heißem Wasser anzugießen und Bloomen zu lassen (ca. 45 Sekunden) und anschließend mit kaltem Wasser aufzugießen.

*Das Filtern kann etwas dauern, da das Filterpapier nach einiger Zeit verstopft. Daher:

**Nutze ich gern entweder einen Cold Brew Maker oder den Carl Henkel Coffee Maker. Beides habe ich dir unten verlinkt und du es gibt ein Cold Brew Einsteigerpaket in meinem Shop. Auch diesen Link findest du am Ende des Artikels noch mal.

Espresso Tonic

Ein absolutes Highlight unter den Sommer Kaffee Rezepten ist der Espresso Tonic. Eher schon ein Feuerwerk der Aromen, zumindest wenn man ihn richtig zubereitet. Ich habe lange nach einem Rezept gesucht und hier ist mein Ergebnis.

Ein Espresso Tonic, ein sehr modernes Sommer Kaffee Rezept mit tollen Aromen, ein echt erfrischender Genuss. Hier steht ein Glas davon auf einem mit Moosen bewachsenen Stein. Im unscharfen Hintergrund erkennt man eine Wiese ein paar Bäume und das Ufer eines Sees. Das Getränk selbst ist in einem schön verzierten Kristallglas, oder Whiskey Tumbler. Ein guter Espresso Tonic wie dieser hier hat zwei Phasen. Unten das transparente Tonic Water und darüber eine Rubin braun Farben Schicht Espresso. In dem Glas schwimmen drei Eiswürfel und ein Rosmarin Zweig.

Rezept:

  1. Eiswürfel in ein Glas geben bis es voll ist. (Eis aus gefiltertem Wasser)
  2. Glas zu guten 2/3 mit hochwertigem Tonic Water füllen
  3. Espresso in ein Espresso Kännchen extrahieren – nach Geschmack und größe des Glases auch einen doppel Shot.
  4. Espresso vorsichtig und langsam, ggf. über einen Löffel auf die Eiswürfel geben
  5. Mit Orange/Minze/Rosmarin o.ä. dekorieren und genießen

Empfohlener Kaffee: 100% Arabica, fruchtig, eher hell geröstet, Afrika oder sehr hohe Lagen in zentral Amerika, hohe Qualität, perfekt extrahiert.

Ganz entscheident ist hier, das man viel Eis, gutes Tonic Water und gut extrahierten hellen Espresso benutzt. Wenn es am Anfang nicht gleich super gut schmeckt tüftel ein wenig, es lohnt sich!

Affogato

…oder auch „Ertrunkener“. Zugegeben, das ist weniger ein Erfrischungsgetränk als ein Dessert. Dennoch küre ich den Affogate jedes Jahr aufs Neue zu einem absoluten Highlight der Sommer Kaffee Rezepte. Absolut nicht neumodisches und wohl einfach nur die italienische Version des Eiskaffees, aber daher nicht weniger großartig.

Ein Affogato al Caffè in der Zubereitung. Hier steht ein breites glattes Glas gefüllt mit zwei Kugeln dunklem Eis unter einem Bodenlosen Siebträger einer Espressomaschine. Gerade läuft dunkler Espresso auf die leicht angeschmolzenen Kugeln.

Rezept:

  1. Eine Kugel gutes Vanille Eis in einen kleinen Tumbler oder eine (kalte) Tasse geben.
  2. Einen Espresso in einen Espresso Kännchen extrahieren
  3. Den Espresso langsam kreisend auf die Eis Kugel geben
  4. Zügig beginnen das Ganze zu genießen.

Empfohlener Kaffee: sauberer klassischer Espresso mit viel Schoko/Kakao Noten und vollem Körper. Auch hier ist es wichtig, dass der Espresso gut extrahiert ist.

Funktioniert übrigens auch wunderbar mit anderen Eissorten, mein zweiter Favorit wäre da Pistazieneis….das ist so lecker zusammen.
