Cremig, süß und weich, so sollte doch ein wunderbarer Milchschaum auf dem Cappuccino ausschauen, oder? Mindestens wenn man diese wundervollen Muster zeichnen will. So richtige Latte Art wie vom Barista.

Einfach toll sowas – nur leider gar nicht mal so einfach. Wie so oft im Leben, versprechen genau hier allerlei Hilfsmittel und neue Zauberformeln Abhilfe, wenn´s mal wieder schwierig wird. Denn eins ist sicher, wo ein Trend ist, ist die Zusatzausrüstung nicht weit.

Gibt es die perfekte Milchkanne für Latte Art?

Ja und nein, denn es gibt mehr als Eine. Ich würde behaupten jeder Barista hat Seine. Wer öfter mal an unterschiedlichen Maschinen oder Getränke mit verschiedenen Größen zubereitet, auch der kann durchaus mehr als ein Set Kannen gebrauchen.

Das hat unterschiedliche Ursachen und genau denen gehen wir heute ein wenig auf den Grund. Dafür lass als erstes mal darüber sprechen:

Was macht die perfekte Milchkanne für Latte Art aus?

Die richtige Kombination von Eigenschaften für deinen Anwendungsbereich. Super Antwort, oder? Aber sie ist wahr. Denn bevor du dich auf die Suche nach den Merkmalen für eine perfekte Milchkanne aufmachen kannst, solltest du dir im Klaren darüber sein, was du denn eigentlich vorhast.

Wenn du ein Heim Barista bist, der gerne morgens und bei Besuch mal einen Cappuccino in den Humpen zuhause gießt, reichen dir ganz andere Eigenschaften, als wenn du ein Barista an einer hochfrequentierten Bar bist, oder gar ein Barista, der an einer Latte Art Meisterschaft teilnehmen möchte.

Worüber du dir Gedanken machen solltest:

1. Wie groß sind meine Tassen?
2. Wie viel Milchschaum benötige ich regelmäßig auf einmal?
3. Wieviel Druck hat meine Maschine?
4. Will ich auch Latte Art gießen?

Wie groß sollte meine Barista Milchkanne sein?

Die Fragen 1-3 bestimmen in aller erster Linie die wohl wichtigste Eigenschaft einer guten Barista Milchkanne, die richtige Größe!

Die Milchschaum Menge

Die Kannen funktionieren am besten, wenn man sie bis zum Anfang der Tülle befüllt. Zum einen, damit man beim Schäumen noch genug Luft nach oben hat und zum anderen um später besser arbeiten zu können. Die fertige Milchschaummenge sollte dann auch für die Getränke passen. Logischerweise sollte man also nicht mit einer 350ml Kanne versuchen 2 Latte Macchiati zu produzieren und nicht die 1L Pulle benutzen, um einen Espresso Macchiato mit Milch zu beträufeln.

Der Druck der Espressomaschine

Einfache Espressomaschinen für den Heim Barista haben meist nur wenig Druck fürs Milchschäumen und wenn doch dann meist eher kurz. Rückt man hier mit einer großen Kanne an, ist einfach nicht genügend Power vorhanden, um einen guten Milchschaum zu produzieren.

Geht man dagegen unüberlegt mit einem Minikännchen an eine Professionelle Siebträgermaschine ran und reißt den Dampfhahn auf, haben die Wände und die eigene Kleindung ein neues Muster.

Die richtige Milchkannengröße fürs Latte Art gießen

Auch hier gelten die oberen beiden Fragen als wichtige Referenz für das Schäumen. Das eigentliche Gießen kann aber natürlich auch aus einer neuen Kanne erfolgen. Grundsätzlich bietet es sich sowieso an, mindestens ein 2er Set an Kannen zu haben – immer eine große und eine etwas kleinere. Das hilft bei der Milchschaumverteilung, aber auch für einfacheres Latte Art gießen.

Für ein gutes Ergebnis muss man nämlich sehr nah und möglichst flach an die Crema herankommen und das geht eben deutlich besser, wenn die Kanne nicht so voll ist.

Die richtige Form für ein Latte Art Milchkännchen

Inzwischen gibt es viele verschiedene Formen – bauchig, gerade, vorne etwas höher, mit spitzer Tülle, mit runder Tülle, mit breiter Tülle.

Was einem da am besten zusagt sollte man einfach ausprobieren. In meinen Augen hat jede Form so seine Vor- und Nachteile. Was man sagen kann, ist dass es durchaus Formen auf der Kannen Innenseite gibt, die es etwas leichter machen die Milch ins Drehen zu bringen – guten Schaum bekommt man aber auch in einem Eimer hin, wenn man weiß, wie es geht.

Das richtige Material

Ja, die Kannen sind eigentlich alle aus Edelstahl – manche beschichtet, manche mit Diamanten beklebt, ob man das braucht…naja.

Große Unterschiede gibt es aber in der Dicke des Materials. Gerade günstige Kannen sind oft super dünn, manch teurere ziemlich dick. Damit möchte ich nicht sagen, dass dicke Kannenwände von Vorteil sind, denn so einfach ist es nicht. Die Wahrheit liegt nämlich eher in der Mitte. Eine gute Wandstärke ist, wenn man die Erwärmung der Milch langsam und graduell spürt, aber nicht zu sehr zeitversetzt.

Am Ende kann man sich aber auch hier mit allem anfreunden. Mein Tipp ist aber: suche dir Kannen mit gleichen Wandstärken (in etwa), ganz besonders, wenn du am Anfang stehst. Denn man kalibriert sich auf das entsprechende Temperaturgefühl und das wird eben entscheidend von der Dicke des Materials bestimmt.

Fazit

Milchschäumen kann man in allem, was den Druck aushält. Für guten Milchschaum ist also sowohl die richtige Technik als auch gute Milch und vielleicht eine Maschine mit ausreichenden Fähigkeiten entscheidend.

Wer zudem auch noch Latte Art gießen möchte, der darf dann aber durchaus ein bisschen recherchieren nach der für ihn passenden Milchkanne.

Profitipp Nummer 1: Ausprobieren, sofern es irgendwie geht.

Ob man aber als Heim Barista oder für den täglichen Einsatz an einer Barista Bar mehr als 100 Euro für eine Milchkanne hinlegen muss, dass wage ich zu bezweifeln.
