Barista in Guatemala, ein Fazit - Folge 86

2 Monate ist es jetzt her, dass ich wieder zurückgekommen bin – genauso lang wie ich weg war. Denn 2 Monate lang habe ich in Guatemala gelebt, als Barista gearbeitet, mein Wissen geteilt und viel Neues erfahren. Es war eine wirklich bewegende Reise, die mich tief beeindruckt und verändert hat.

Heute möchte ich ein paar der Fragen zu dieser Reise beantworten, die mir immer wieder gestellt wurden in den letzten Wochen. „Na, wie war´s?“ ist dabei gar nicht so leicht zu beantworten. Denn es war alles Mögliche, von ganz wundervoll bis absolut erschütternd, von absolut ganz anders als gewollt, bis zu unfassbarem Glück, dass man solch tolle Dinge erleben darf.

Mit dieser Folge möchte ich, für dich und für mich, dieses Kapitel etwas runder machen. Ich will den Versuch starten dir, aus meiner ganz subjektiven Sicht, eine Reise zu beschreiben, welche ganz anders war als erwartet und genau deshalb so unfassbar wertvoll ist.

Die Reise nach Guatemala

Fangen wir mit der eigentlichen Reise an, denn diese fand nun mal noch mitten in der Pandemie statt. Das war definitiv ein Faktor, der für etwas Anspannung bei uns gesorgt hat. Letztendlich war es dann aber doch kein großes Hexenwerk. Mit deutschem Pass, geimpft und einem negativen Schnelltest, sowie einer Transitanmeldung für Spanien muss man nur noch 24h Maske im Gesicht ertragen und schon standen einem alle Türen offen. Für den Rückweg brauchten wir dann nur noch den Transitschein und natürlich unsere Pässe und Masken.

Und ja, ich schreibe hier ganz ungewohnt im Plural, denn ich hatte das riesige Glück dieses Abenteuer „con mi media naranja“ – also „mit meiner halben Orange“, aka. meiner jetzigen Verlobten, erleben zu dürfen. Sie ist ebenfalls Barista und so kaffeeverrückt wie ich. Also wollten wir dort gemeinsam großartige Projekte mit Kaffee voranbringen, Erfahrungen sammeln, erleben wie es ist in Guatemala als Barista zu arbeiten, noch tiefer in die Welt des Kaffees eintauchen und natürlich im Tausch auch unser Wissen und unsere Erfahrungen weitergeben.

Alles ist anders

Jeder der schon mal gereist ist weiß aber auch, allzu viel planen bringt rein gar nichts. So weit weg von zuhause, ist die Kultur, die Denkweise, ja die ganze Grundlage aller Entscheidungen einfach eine ganz andere. Das war uns freilich klar, bevor wir los sind, dennoch waren die ersten Tage, wenn nicht sogar Wochen, eine harte Lektion.

Es fällt mir wahnsinnig schwer die richtigen Worte zu finden, um unseren Kulturschock richtig zu vermitteln. Denn für jemanden der die Erfahrung nicht in Gänze gemacht hat und aus deutscher Denkstruktur zuhört, klingt es vielleicht negativ. Dabei ist es oft einfach nur anders. Und genau dieses „Anders“ ist doch das, wonach man auf einer solchen Reise sucht, oder?

Wenn ich es stark komprimiere, dann würde ich das Temperament vor Ort mit unverbindlich und extrem entspannt beschreiben. Das gibt viel Freiheit, jeder darf für sich selbst entscheiden, du kannst einfach machen und jeder lässt jeden erst mal machen. So arrangieren sich dann alle irgendwie mit allen und mit allem, ganz ohne Stress. Das heißt aber auch, dass du bei ALLEM genau hinschauen und aufpassen musst, denn Standards gibt es nicht.

Außerdem spielt auch unsere Aufenthaltsdauer und -art natürlich eine erhebliche Rolle in der Erfahrungsintensität des Ganzen. Wir waren eben nicht nur 2 Wochen unterwegs und haben eine Tour bekommen, sondern wir haben 2 Monate in Guatemala gelebt. Eine Zeit, welche gefüllt war mit einer Fülle an Erfahrungen, die locker in ein Jahr passt.

Unbezahlbare Erfahrungen

Neben all den persönlichen Erfahrungen, war aber die Kaffeemission das zentrale Element dieser Reise. Die Erfahrung unseren Traumberuf, Barista, in einem Kaffeeanbauland auszuüben hat uns dabei genauso gereizt, wie die Möglichkeit des Wissensaustauschs und der Möglichkeit hiermit etwas Gutes zu tun.

Erfahrung als Barista in Guatemala zu arbeiten

Auch bei der Arbeit hinter der Bar, war die Fülle an bereichernden Erfahrungen riesig, viel größer als erwartet. Die Gäste haben andere Wünsche, es gibt andere Trend Getränke, die Milch verhält sich völlig anders, aber auch die Extraktion des Kaffees reagiert anders. Letzteres liegt auch stark an der Frische des Rohkaffees, dazu wird es aber zeitnah eine eigene Folge geben.

Anders ausgedrückt auch die reine Erfahrung der täglichen Arbeit, des Handwerks, welches ich jetzt schon seit 12 Jahren ausübe, ist eine andere. Klar wir sprechen hier von Feinheiten, aber genau die machen das ganze doch so spannend und am Ende des Tages auch den Unterschied, ob ein Gast glücklich war oder nicht und damit, ob man seinen Job ordentlich erledigt hat oder nicht.

Zwei simple Beispiele

Der durchschnittliche Barista, und auch der durchschnittliche Gast in Guatemala, kennen sich deutlich weniger mit Kaffees aus aller Welt aus. Die gibt es hier nämlich fast nirgends. Dafür kennen sie sich aber deutlich besser mit Varietäten, Verarbeitung und auch den Anbau Regionen in Guatemala selbst aus.

Auch was die Zubereitung angeht, ist das Wissen – meiner Erfahrung nach – im Durchschnitt auf beiden Seiten der Theke doch eine Ecke weniger ausgeprägt, als in Deutschland. Dafür kennen die Baristi in Guatemala aber Zubereiter, die man hier eigentlich nie zu Gesicht bekommt.

Für mich als Kaffee Consultant sind natürlich auch immer die Strukturen und Systeme hinter den Kulissen ein spannendes Thema. Ganz besonders in einem Land, in dem sowieso alles anders funktioniert, in dem die Herausforderungen völlig andere sind. Gerade dieser Vergleich beider Welten hat mir unfassbar wertvolle Einblicke gegeben.

Kaffee erleben

An unseren freien Tagen haben wir ein paar Touren auf Kaffee Fincas gemacht, was für Kaffeegeeks aus Europa natürlich ein absolutes Highlight ist. Dabei ist jeder Besuch einzigartig. Man baut einfach ein völlig anderen, viel tieferen Bezug, ein völlig anderes Verständnis zum Thema, auf.

Es ist ein erhebendes Gefühl zwischen Kaffeepflanzen zu leben. Man sieht Kaffeepflanzen überall, am Straßenrand, in den Gärten, auf Plantagen, auf Balkonen. Man arbeitet zwischen und mit ihnen, wacht auf, schaut aus dem Fenster und sieht einen Kaffeebaum. Wie absolut wundervoll.

Wir hatten außerdem noch das Glück eben nicht die Touri Kaffeetouren machen zu müssen, sondern echte Fincas im Hinterland besuchen zu können, die Hand in fermentierende Kirschen zu tauchen, die Frucht auf der Zunge zu zerdrücken und die Nase in Kaffeeblüten stecken zu dürfen.

Die Lehren und das Wissen aus all diesen Erfahrungen sind natürlich schon in die letzten Folgen eingeflossen und werden es natürlich weiterhin tun.

Fazit

Vielleicht ist dir auch aufgefallen, dass ich das soziale Projekt in diesem Artikel gar nicht erwähnt habe. Das hat seine Gründe, bei aller Schönheit war diese Reise dann doch ganz anders als geplant.

Wir haben Erdbeben überlebt, wären beinah gekentert mit einem Schnellboot, sind mehrmals nur knapp einem schweren Autounfall entkommen und haben nicht nur nette und zuverlässige Menschen kennengelernt. Wir hatten ein echtes Abenteuer, welches eben vor Ort nicht immer nur fluffig leicht war.

Aber genau so war es eben auch gut so. Denn wir haben viel mehr erlebt und gelernt als wir uns jemals hätten vorstellen können. Wir haben herzlichste und inspirierende Menschen und Momente erlebt. Wir haben Erfahrungen gesammelt und das ist unbezahlbar.

Würde ich es genauso noch mal machen? Ja, und ich bin dankbar für die Möglichkeit diese Erfahrungen überhaupt gemacht haben zu können.
